We carry out pre-fermentative cold maceration, fermentation, and post-fermentative maceration with periodic analysis and quality controls in the tanks. Once these processes are finished, IROKO and 3 EN RAYA are directly racked into oak barrels for malolactic fermentation and aging. The aging and oak of our wines vary depending on the grape variety, between 6, 12, and 18 months.
